Mrs. Claus' Chocolate Chip Oatmeal Cookies Ingredients: • 2 1/4 cups all-purpose flour • 1 teaspoon baking soda • 1 teaspoon salt • 1 cup (2 sticks) butter, softened • 3/4 cup granulated sugar • 3/4 cup packed brown sugar • 2 teaspoons vanilla extract • 2 large eggs • 2 cups old-fashioned or quick-cooking oats • 1 1/2 cups semisweet chocolate chips Instructions: 1. Preheat oven to 375°F. 2. In a medium bowl, combine the flour, baking soda and salt; set aside. 3. In a large bowl, beat the butter, granulated sugar, brown sugar and vanilla extract with an electric mixer on medium speed until light and fluffy. Add eggs, one at a time, beating well after each addition. 4. Gradually beat in the flour mixture. Stir in the oats and chocolate chips. 5. Drop dough by rounded tablespoons onto an ungreased baking sheet. 6. Bake for 9 to 11 minutes or until golden brown. Cool on baking sheet for 2 minutes; remove to wire rack to cool completely. Enjoy!
