Mrs. Claus's Tempura Recipe Ingredients: - 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 cups cold water
- 2 eggs, beaten
- 1/2 cup cornstarch
- 2 tablespoons vegetable oil
- 2 pounds of vegetables, cut into bite-sized pieces (such as carrots, sweet potatoes, peppers, onions, mushrooms, etc.)
Instructions:
1. In a large bowl, whisk together the flour, baking powder, and salt.
2. In a separate bowl, whisk together the cold water, eggs, cornstarch, and vegetable oil.
3. Slowly pour the wet ingredients into the dry ingredients, whisking until a smooth batter is formed.
4. Heat a large skillet over medium heat and add enough vegetable oil to cover the bottom of the skillet.
5. Dip the vegetables into the batter, then add to the hot oil. Fry until golden brown, about 2-3 minutes per side.
6. Drain the tempura on a paper towel-lined plate and serve warm. Enjoy!
